The epoxide hydrolase mutant protein provided by the invention is any one of the following proteins: A1) the protein shown in A1) is a protein with epoxide hydrolase activity obtained by mutating at least one of 228th, 308th and 311th amino acid residues of an amino acid sequence of wild epoxide hydrolase; the protein shown in A2) is a fusion protein obtained by connecting the protein shown in A1 with a protein with a targeting function; the protein shown in A3) is a fusion protein obtained by adding a tag sequence to the tail end of the amino acid sequence of the protein shown in A1.
