Zusammenfassung:The invention relates to the technical field of fruit and vegetable drying, in particular to a fruit and vegetable drying treatment method and system.The method comprises the steps that fruits and vegetables to be dried are placed in a drying chamber without a light source, and low-temperature heating drying is conducted on the fruits and vegetables to be dried through an electric heating pipe; determining an initial drying condition according to the average water content data of the to-be-dried fruits and vegetables; acquiring real-time drying state data in the drying process; and whether the initial drying condition is adjusted or not is determined according to the real-time drying state data until drying is completed. The fruit and vegetable drying treatment method and system have the remarkable advantages in the aspects of reducing oxidation browning, improving the drying efficiency, saving energy and achieving intelligent control, and the problems that in the traditional fruit and vegetable drying proces
