Site-specific mutagenesis is carried out on the basis of a female parent TGase, and compared with glutamine transaminase shown in SEQ ID NO.1, the half-life periods at 60 DEG C, 65 DEG C and 70 DEG C of the obtained glutamine transaminase variant FRAPD-TGm2C are increased by 6.5 times, 7.2 times and 6.5 times respectively. In addition, the specific enzyme activities at 70 DEG C, 75 DEG C and 80 DEG C are respectively 2.95 times, 2.33 times and 1.31 times of the specific enzyme activities of the glutamine transaminase shown as SEQ ID NO.1, and the casein cross-linking activity of the glutamine transaminase shown as SEQ ID NO.1 at the high temperature of 78 DEG C is obviously higher than that of the glutamine transaminase shown as SEQ ID NO.1.
