Zusammenfassung:The invention provides calcium ion induced composite nanoparticles as well as a preparation method and application thereof, and belongs to the technical field of biological materials and nanotechnology. According to the composite nanoparticles, curcumin is used as a core, and zein, hydroxypropyl-beta-cyclodextrin and calcium chloride are used as a shell. The calcium ion-induced composite nanoparticles can well maintain particle stability and inhibit release of curcumin in a digestion process in a gastric phase, and realize a continuous slow-release effect and a highest cumulative release amount in an intestinal phase environment, so that the calcium ion-induced composite nanoparticles have the characteristic of adjusting the release of curcumin, and can be used for preparing the curcumin sustained-release preparation. Targeted release of curcumin in intestinal juice is achieved, the antioxidant activity of the calcium ion-induced composite nanoparticles is high, and a theoretical basis is provided for develop
