Zusammenfassung: | The invention relates to the technical field of pectin preparation, and particularly discloses a preparation process of coffee pectin raw stock and fiber colloid, which comprises the following steps: raw material selection, primary treatment, degumming treatment, separation and filtration, stock solution storage, stock solution determination and extraction: extracting a pectin solution by using a micro-nano bubble method; the speed of separating the pectin stock solution from the fiber colloid is accelerated; and the use of an extracting agent is reduced. The pectin stock solution can be used as a raw material of beverages, jelly, fruit vinegar and fruit wine, and the fiber colloid can be used as a raw material of hand cream, face cream and pectin mud.
