The preparation method comprises the following steps: firstly preparing freeze-dried spirulina powder, then adding deionized water to prepare a spirulina liquid, then heating and centrifuging to obtain a spirulina supernatant, finally adding an ethanol solution, and standing and centrifuging to obtain white granular, jelly-shaped and white flocculent spirulina extracts. Respectively freeze-drying the three products to obtain a spirulina extract A, a spirulina extract B and a spirulina extract C; the three spirulina extracts prepared by the invention respectively have free radical scavenging capacity, good viscoelasticity and better water locking capacity, not only can be used as a thickening agent and an adhesive in food to bring a more natural and healthy solution for food industry, but also show excellent swelling property, and can be used as a thickening a
