The method comprises the following steps: randomly dividing the metal canned fruit can into a plurality of groups, and respectively carrying out container quality test, food safety test, content quality test and sensory test; performing factor analysis on test results of the indexes under the storage conditions of 25 DEG C, 37 DEG C and 55 DEG C by adopting a normalization method; extracting a weight index based on a principal component analysis method, and constructing the shelf life prediction model based on the weight index and the shelf life change rate; and inputting parameters of a to-be-detected metal canned fruit can into the shelf life prediction model to verify an output result, and if the result shows that the relative error of the established can shelf life prediction model is less than 10%, outputting a prediction result.
