Zusammenfassung:The invention discloses a preparation method of a slowly digestible whole grain corn food and a whole grain corn food.The method comprises the steps that corn kernels are added into purified water to be beaten into a corn whole pulp raw material, and cellulase and xylanase are added for first-time enzymolysis treatment; after the first-time enzymolysis treatment is completed, beta-1, 4-maltosidase, alpha-amylase and alpha-transglucosidase are added for second-time enzymolysis treatment, and enzyme modified corn whole pulp, namely the slowly digestible whole grain corn food, is obtained. 本发明公开了一种慢消化全谷物玉米食品的制备方法及全谷物玉米食品,该方法为将玉米籽粒加入到纯净水中打成玉米全浆原料,先加入纤维素酶及木聚糖酶进行第一次酶解处理;待第一次酶解处理完成后,再加入β-1,4-麦芽糖苷酶、α-淀粉酶和α-转移葡萄糖苷酶进行第二次酶解处理,得到酶改性玉米全浆,即为慢消化全谷物玉米食品。
