The invention relates to a tenebrio molitor protein extraction method. The method comprises the following steps: cleaning and sterilizing tenebrio molitor bodies, and then drying and crushing adult body powder; then, the smashed insect bodies are made into adult pulp through an organic solvent, and degreasing treatment is conducted through a supercritical CO2 fluid extraction method; adding water into the degreased insect pulp, homogenizing, and filtering to remove impurities; carrying out enzymolysis treatment on the purified homogenate to generate hydrolysate, and enriching and precipitating through an electric point-salting-out combined method to obtain a precipitate; centrifugally desalting the precipitate, adding water, homogenizing, precipitating and discharging water; and finally, removing insoluble protein by adopting a small molecule bioactive peptide separation technology, and preparing the high-purity tenebrio molitor protein by adopting a spray drying method.
