The white snakehead antioxidant peptide is extracted from white snakeheads, and the amino acid sequence of the white snakehead antioxidant peptide is as shown in SEQ ID NO: 1. The preparation method comprises the following steps: firstly simulating human body in-vitro digestion, performing enzymolysis on the white snakeheaded fish to obtain enzymatic hydrolysate, performing ultrafiltration separation to intercept ultrafiltration components with the molecular weight of less than 3000Da, performing gel chromatography, and further separating and purifying chromatography components with antioxidant activity by adopting an RP-HPLC (Reverse Phase-High Performance Liquid Chromatography) method to obtain the white snakeheaded fish antioxidant peptide.
