According to the preparation method of the highland barley malt, provided by the invention, the water absorption speed of highland barley grains is increased by regulating and controlling the barley steeping time and temperature, and enzyme in the highland barley grains is favorably activated; by reasonably setting the germination temperature, time and humidity, sufficient action of the wheat grains and enzyme is facilitated, germination of the wheat grains is promoted, and generation of more enzyme substances is facilitated; by controlling the drying temperature and time, the solubility of the malt is improved, the filtering speed, turbidity and brittleness of the malt are improved, and the aroma of the malt is also increased.
