Zusammenfassung:	The invention discloses a quercetin-loaded protein-polysaccharide ternary composite nanoparticle as well as a preparation method and application of the quercetin-loaded protein-polysaccharide ternary composite nanoparticle. Comprising the following steps: preparing a zein and quercetin ethanol solution, preparing a gelatin solution, preparing a quercetin-loaded gelatin modified zein nanoparticle dispersion liquid, preparing a carboxymethyl starch solution, and preparing a quercetin-loaded gelatin-carboxymethyl starch double modified zein nanoparticle dispersion liquid. According to the quercetin nanoparticles disclosed by the invention, the thermal stability, pH stability, light stability and storage stability of a drug delivery system are remarkably improved; the ternary composite nanoparticle (zein-gelatin-carboxymethyl starch) for delivering quercetin has higher pH stability, can be very stable when the pH value is 2-8, and also shows higher antioxidant activity and higher in-vitro bioavailability.
