The extrusion-shape restoring treatment adopted by the invention greatly improves the crispness of the torreya grandis kernels. Compared with torreya grandis kernels baked at a single temperature or torreya grandis kernels baked at a high temperature and then at a low temperature, the torreya grandis kernels baked at a low temperature and then at a high temperature have better crispness, better color and luster and lower acrylamide content.
