Zusammenfassung:	The invention relates to a polypeptide-octenyl succinic acid modified starch compound as well as a preparation method and application thereof. The preparation method comprises the following steps: mixing starch slurry with octenyl succinic anhydride under an alkaline condition for reaction to obtain octenyl succinic acid starch ester; mixing the octenyl succinic acid modified starch, polypeptide and water, and regulating the pH value to 2-5 to obtain a mixture; and drying the mixture until the water content is lower than 5%, and then reacting at the temperature of 120-180 DEG C to obtain the polypeptide-octenyl succinic acid modified starch compound. According to the preparation method disclosed by the invention, interaction of the polypeptide and the starch under a low-moisture condition is realized, and the prepared compound has relatively good cold water solubility, emulsifying capacity and mechanical property, and can be used as an embedding material for preparing microcapsules, so that the pressure resis
