Zusammenfassung:The invention discloses a fermented bean curd fermentation preparation process which comprises the following steps: (1) soaking soybeans, grinding into thick liquid, and filtering the thick liquid to obtain soybean milk; (2) boiling and curdling the soybean milk to prepare bean curd, and cutting the bean curd into blocks to obtain bean curd blanks; (3) performing natural cultivation fermentation on the bean curd blank, rubbing hyphae open after hyphae grow, soaking the hyphae in white spirit, and then adding auxiliary materials, so that each surface of the bean curd blank is coated with the auxiliary materials to obtain a pre-fermented bean curd blank; and (4) sealing the pre-fermented bean curd blank, and then performing post-fermentation to obtain the fermented bean curd.
