Zusammenfassung: | The invention discloses a pecan polypeptide preparation method, which comprises: 1) pecan kernel pretreatment: carrying out pretreatment on pecan kernels to obtain degreased pecan powder; (2) preparing pecan protein: adding sodium chloride into water to prepare a sodium chloride solution with the concentration of 0.05-0.25 mol/L, then adding the degreased pecan powder in the step (1), mixing to obtain feed liquid, and preparing the pecan protein by adopting an alkali extraction and acid precipitation method; 3) pecan protein enzymolysis: adding the pecan protein in the step 2) into water, mixing, adding protease for hydrolysis, enzyme deactivation and filtration to obtain pecan polypeptide; the dosage ratio of the pecan protein to the water is 1g: (5-20) mL.
