Zusammenfassung: | The invention discloses normal-temperature stable type adjustable low-saturation double-gel emulsion foam as well as a preparation method and application thereof, and belongs to the technical field of grease processing and emulsified fat products. The preparation method comprises the following steps: adding the crystalline emulsifier and the natural wax into the edible vegetable oil, heating and stirring to completely dissolve; adding polysaccharide into water, and completely dissolving the polysaccharide to form hydrogel; mixing the obtained hydrogel phase with the oil gel phase, and performing high-speed shearing, dispersing and emulsifying to form emulsion gel; cooling the obtained emulsion gel in an ice-water bath to room temperature, and sealing and storing at room temperature for later use; and stirring and inflating the emulsion gel at room temperature to obtain the double-phase gel foam.
