Zusammenfassung:The invention relates to the technical field of emulsion preparation, in particular to linolenic acid emulsion and a preparation method thereof. A starch-protein-polyphenol compound with high antioxidant activity is used as an emulsion stabilizer of a linolenic acid emulsion, an aqueous solution of the compound is used as a water phase of the emulsion, linolenic acid is used as an oil phase of the emulsion, and the starch-protein-polyphenol compound and the linolenic acid are mixed and then subjected to high-speed shearing to obtain a crude linolenic acid emulsion; and performing ultrasonic treatment on the linolenic acid crude emulsion to further obtain the linolenic acid emulsion with high oxidation stability.
