Zusammenfassung:The invention provides a rice bran functional composition and a preparation method thereof, and a food containing the rice bran functional composition. The preparation method comprises the following steps: an enzymolysis step: forming a water dispersion system of defatted rice bran, adding amylase into the dispersion system for enzymolysis to obtain an enzymatic hydrolysate, and preferably, adding protease in the enzymolysis step; and a freezing and thawing step: carrying out freezing and thawing treatment on the enzymatic hydrolysate. By adopting the preparation method, the process is simple, the production cost is effectively reduced, and the problem that the blood sugar is rapidly increased within a short time is solved by cooperating with the blood sugar reducing effect of the peptide and the polysaccharide. Through freezing and thawing treatment, the problem that when the rice bran functional composition is applied to a baked product, the taste of the product becomes hard is solved, and the adding amount
