Zusammenfassung:The invention provides a preparation method of a fresh tomato hotpot condiment, which comprises the following steps: A) respectively pulping fresh tomatoes and mangoes to obtain pulped tomato pulp and mango pulp; b) naturally fermenting the tomato pulp and the mango pulp to obtain fermented tomato and mango pulp; c) adding vegetable oil into a frying pan, heating, adding ginger and onion, frying, adding the fermented tomato and mango pulp, continuously frying, continuously boiling, and collecting tomato essential oil by adopting an essential oil recovery device; and D) turning off the fire of the frying pan, mixing and stirring the collected tomato essential oil, sugar, salt, chicken essence and yeast extract, packaging, and sterilizing. The processing technology of firstly fermenting and then boiling is adopted, and the fragrance collection and backfilling mode is utilized, so that the product retains the natural fragrance of the fresh tomatoes to the maximum extent, and the product is more unique in flavor
