Process for obtaining natural pigment and product

The invention discloses a process for obtaining a natural pigment and a product. Comprising the following steps: 1) cleaning picked fresh safflower with clear water for 3-5 times to remove surface impurities; (2) crushing the flos carthami cleaned by the clean water, then wrapping the flos carthami with gauze, adding the flos carthami into a lemon juice solution, and soaking and extruding the flos carthami for 3-5 times; (3) carrying out drying treatment under the condition of 20-30 DEG C; 4) crushing the dried safflower carthamus, filtering with a filter sieve, and adding into a mixed solution of a solvent and soda water for extraction; (5) carrying out centrifugal treatment on the extracted solution to obtain upper-layer filtrate; (6) adding a proper amount of lemon juice and potassium alum mixed liquid into the supernatant filtrate, and adjusting the pH value to 3.5-6.5; 7) performing sterilization treatment under the condition that the temperature is controlled to be 110-120 DEG C; and 8) obtaining the wa
