Zusammenfassung: | The invention discloses a preparation technology for extracting chitin from shrimp shells and preparing chitosan particles, and belongs to the technical field of chitin extraction. Comprising the following steps: step 1, glycerol pretreatment: putting shrimp shells into hot glycerol, heating, filtering, and removing protein from shell matrixes; step 2, desalination and deproteinization treatment: grinding the pretreated shrimp shells, washing with water to remove protein fragments and part of mineral substances, demineralizing with citric acid, and drying to obtain chitin. Step 3, deacetylation of chitin: adding a chitin sample into an alkaline solution, heating in a sealed water bath to hydrolyze amide, filtering, and dissolving filter residues with acetic acid; and step 4, ionic cross-linking method: mixing the chitosan solution with TPP, performing ultrasonic oscillation, and filtering to obtain the chitosan nanoparticle solution.
