Zusammenfassung: | The invention discloses a preparation method of salt baked marinated eggs, which comprises the following steps: (1) cleaning an egg with a smooth surface shell and no obvious damage, placing the egg in a mixed aqueous solution containing 4-6% of lactic acid and 3-5% of sodium chloride for immersion cleaning treatment for 10-20 minutes, then draining water, steaming, and shelling by using a shelling machine; (2) putting the peeled eggs into a marinating material, and sealing and marinating; (3) putting the marinated eggs in a salt tray, rolling for a circle, uniformly covering the surfaces of the eggs with salt particles, and putting the eggs in a baking oven for baking; and (4) cleaning the baked eggs to remove salt particles on the surfaces, bagging, vacuumizing, sealing, packaging and sterilizing.
