The method comprises the following steps: establishing a three-dimensional solid model and a kinematics simulation model of the hydraulic excavator; establishing a material particle three-dimensional solid model; obtaining the bulk force and stress-strain characteristics of the bucket in the process of excavating the slope material pile by the bucket through simulation analysis; grouping the ear plate structure parameters in pairs, carrying out ANSYS response surface optimization, verifying the effectiveness of each response surface, and solving the optimal size parameter result of each group; and coupling multiple groups of response surface optimal ear plate structure size parameters, verifying the stress-strain characteristics of the bucket corresponding to the optimal ear plate structure size, and obtaining the ANSYS response surface optimization-based optimal ear plate struct
