Zusammenfassung: | The invention provides application of soybean specific quantitative polypeptide in detection of soybean protein content of meat products, and relates to the technical field of food detection. The invention provides a soybean specific quantitative polypeptide which comprises one of SPQLQNLR, NILEASYDTK or EQQEQQEEQPLEVR, and the soybean specific quantitative polypeptide is used for detecting the content of soybean protein in meat products. Experimental results show that the recovery rate of the soybean protein in the meat product detected by the soybean specific quantitative polypeptide reaches 87.52-94.19%, while the recovery rate of the soybean protein in the meat product detected by the ALVQVVNCNGER polypeptide is only 48.91%, so that the method for detecting the content of the soybean protein in the meat product by the soybean specific quantitative polypeptide has the advantages of strong specificity and high accuracy, and the method is suitable for popularization and application.
