HEAT RESISTANT PROTEIN GLUTAMINASE

The purpose of the present invention is to provide a protein glutaminase having improved heat resistance. The heat resistance of a protein glutaminase comprising a polypeptide represented by any one of the following (1)-(3) is improved: (1) a polypeptide comprising an amino acid sequence represented by SEQ ID NO: 1 or 2; (2) a polypeptide obtained by substitution, addition, insertion or deletion of one or more amino acid residues in the amino acid sequence represented by SEQ ID NO: 1 or 2 and exhibiting heat resistance equivalent to that of a polypeptide comprising the amino acid sequence represented by SEQ ID NO: 1 or 2; and (3) a polypeptide which has a sequence identity of 76% or more with respect to the amino acid sequence represented by SEQ ID NO: 1 or 2 in the amino acid sequence represented by SEQ ID NO: 1 or 2 and which exhibits heat resistance equivalent to that of a polypeptide comprising the amino acid sequence represented by SEQ ID NO: 1 or 2. 本发明的目的在于提供一种耐热性提高的蛋白质谷氨酰胺酶。包含以下的(1)～(3)中任一项所示的多肽的蛋白质谷氨
