A method for producing a food material for a refrigerated or frozen coated fried food product, said method comprising: adhering a powdery coating material containing 30-95% by mass of a fat-processed starch and 5-70% by mass of a potato starch to a raw material, and producing a coated raw material having a layer of the powdery coating material covering the outermost surface; and refrigerating or freezing the obtained raw material with the surface coating material.
