The gene is derived from a dextran sucrase gene of leuconostoc mesenteroides, and is the dextran sucrase gene obtained by cloning from a leuconostoc mesenteroides genome by designing a primer. The protein coded by the gene can be used for preparing dextran, oligosaccharide or fructose.
