The novel amino acid surfactant has a hydrophobic part formed by catechol compounds and a hydrophilic part formed by amino acid, the preparation method comprises the following steps: carrying out Michael addition reaction on o-benzoquinone obtained by oxidizing a catechol compound and amino acid, and carrying out Schiff base reaction to realize covalent linkage of catechol and amino acid, thereby obtaining the novel amino acid surfactant.
