Zusammenfassung: | The invention relates to ethanol dehydrogenase ADH10C1 with improved heat resistance as well as a coding gene and application thereof. The ethanol dehydrogenase ADH10C1 is obtained by mutation of the ethanol dehydrogenase ADH10 sequence SEQ ID NO.2 of the zygosaccharomyces rouxii CBS732, and the mutation sites of the ethanol dehydrogenase ADH10 sequence SEQ ID NO.2 are G201C, G207C, P52C and E56C. The mutant can still maintain 80% of enzyme activity at a high temperature of 70 DEG C for 5 min, while ADH10 can only maintain 60% of enzyme activity at a temperature of 60 DEG C for 5 min; the optimal pH value of the mutant is 8.5, and the mutant has higher enzyme activity and good pH stability when the pH value is 7.5-10.5; the mutant has good thermal stability and protease resistance.
