Zusammenfassung:	The invention provides a preparation method of fermented hericium erinaceus powder rich in beta-glucan, which comprises the following steps: A) mixing and sterilizing glucose, peptone, yeast extract and hericium erinaceus powder to prepare a culture medium; b) inoculating probiotics into the culture medium, and performing fermentation culture to obtain fermentation liquor; c) performing enzymolysis treatment on the fermentation liquor to obtain enzymatic hydrolysate; and D) centrifuging the enzymatic hydrolysate, and freeze-drying to obtain the fermented hericium erinaceus powder.
