Zusammenfassung: | The invention provides a matcha product as well as a preparation method and application thereof, and the preparation method comprises the following steps: (1) mixing dry tea leaves with ice water, and carrying out primary wet crushing and filtering to obtain primary tea pulp; (2) performing second-stage wet crushing on the first-stage tea pulp to obtain second-stage tea pulp; (3) defoaming the secondary tea pulp, and then performing ultrahigh-pressure supersonic nano-crushing on the secondary tea pulp to obtain crushed tea pulp; and (4) sterilizing the crushed tea pulp through a UHT process to obtain the sterile matcha pulp. According to the making method, the problem of microorganism residues in the matcha making process is solved, the quality of the matcha product is improved, and the matcha product made through the making method is brighter in color and fresher and more natural in flavor and keeps the natural fragrance of tea leaves.
