Zusammenfassung: | The invention belongs to the technical field of meat product processing, and particularly relates to a preserved meat pickling method which comprises the following steps: step 1, selecting materials: selecting streaky pork of a pig body; and step 2, preparing a pickling material, namely automatically cutting the streaky pork of the pig body selected in the step 1 through a pickling material treatment device, and smearing the pickling material on the streaky pork. According to the preserved meat pickling method, the steps 1-6 and a pickling material processing device are arranged, in the preserved meat making process, the traditional working procedure of firstly cutting meat strips and then smearing materials for pickling is changed, after the whole pork is integrally weighed, the pork is transversely and longitudinally cut, then a certain amount of pickling materials are evenly smeared according to the weight of the whole pork, and therefore the preserved meat is obtained.
