Zusammenfassung:The invention discloses a preparation method and application of tea residue protein, and belongs to the technical field of tea leaf processing. The preparation method comprises the following steps: (1) adding alkali liquor into tea residues, stirring, extracting, and filtering to obtain an extracting solution; (2) adding an acid solution into the extracting solution to adjust the pH value, centrifuging and concentrating to obtain a concentrated solution; (3) adding water into the concentrated solution for desalting to obtain desalted protein; and (4) carrying out spray drying on the desalted protein to obtain the tea residue protein. The tea residue protein provided by the invention has antioxidant capacity and anti-inflammatory capacity, and the anti-inflammatory performance is more prominent.
