Zusammenfassung: | The invention provides a preparation method for co-cooking and co-cooking pearl red beans and rice, which comprises the following steps: adding edible alkali liquor into the pearl red beans, stirring and blanching; fishing out the pearl red beans blanched with the alkali liquor, washing with clear water, adding an enzyme solution, and carrying out enzymolysis; washing the pearl red beans after enzymolysis, and putting the pearl red beans into a tunnel-type variable-temperature differential-pressure micro-puffing treatment machine for micro-puffing treatment; and performing tunnel type hot air drying to obtain the pearl red beans and rice which are cooked together. The method is used for solving the problems that the pearl red beans need to be soaked in advance to be normally cooked and eaten when being added into rice for eating due to relatively hard texture, the operation is inconvenient, and the pearl red beans are not suitable for the modern fast-paced lifestyle.
