Zusammenfassung: | The present invention relates to a composition for making protein noodles containing plant raw materials and a method for making protein noodles using the composition, the composition for making protein noodles of the present invention comprising plant proteins, potato fibers, alginate and starch. According to the present invention, the high-protein noodles having high protein content, excellent flavor and low calorie can be produced by using the vegetable protein as the main raw material of the noodles, and the taste and texture of the noodles can be greatly improved by mixing the vegetable protein, the potato fiber, the alginate and the starch. Moreover, by simplifying the pretreatment of the raw material and the noodle making process, the noodle can be made by a simple method, and can also be applied to mass production.
