Zusammenfassung:The invention relates to the technical field of ham sausages, in particular to a milk and corn ham sausage and a preparation method thereof, and the milk and corn ham sausage comprises the following components in parts by weight: 100 parts of fresh pork, 5-10 parts of pure milk, 5-10 parts of corn, 0.2-0.5 part of a yeast extract, 0.1-0.2 part of sodium tripolyphosphate, 0.05-0.1 part of sodium pyrophosphate and 0.5-0.8 part of hydroxypropyl distarch phosphate. The preparation method comprises the following steps: cleaning pork, adding milk, automatically pulping for 1.5 minutes, stopping for 10 seconds, adding purified water, sodium tripolyphosphate, sodium pyrophosphate, hydroxy propyl distarch phosphate and a yeast extract, continuing pulping for 1 minute, then adding corn, filling sausages, and cooking; the ham sausage added with the milk and the corn according to a specific ratio not only can maintain the taste sense of the original ham sausage, but also has light milk flavor and sweet taste of the corn,
