Zusammenfassung: | The invention provides a production and processing method of marinated soft boiled eggs, which comprises the following steps: (1) carrying out semi-immersion type cooking on eggs, specifically, immersing 1/3-2/3 volume of the eggs into a heat transfer medium, and continuously rotating the eggs in the cooking process by using external force; (2) cooling the eggs and then shelling the eggs; and (3) immersing the shelled eggs into seasoning marinade containing a preservative, and performing marinating. According to the production and processing method, the problems that in the prior art, the egg explosion phenomenon is serious during boiling, the yolk is eccentric, the shelf life of normal-temperature soft boiled eggs is short, the flavor is single, the processing time is long, and the production efficiency is low are solved.
