The invention also discloses application of the catalyst in catalyzing sucrose to produce fructo-oligosaccharide, and a preparation method of the catalyst. The glucose oxidase-fructosyl transferase fusion enzyme is displayed on the surface of the pichia pastoris, whole cells of the pichia pastoris are used for catalyzing and producing the fructo-oligosaccharide, the inhibition effect of glucose on the reaction is eliminated during production, and the conversion rate of the fructo-oligosaccharide can be effectively improved.
