Zusammenfassung: | The invention relates to a polysaccharide substance stable high internal phase emulsion and a preparation method and application thereof, and the preparation method comprises the following steps: dispersing any one of sodium carboxymethyl cellulose, sodium alginate and pectin in water or an aqueous solution, standing, and preparing a solution with the mass percent concentration of 0.05-3% and the pH value of less than 5.2 as an aqueous phase; the water phase and the oil phase prepared in the step S1 are subjected to shear mixing, and the high internal phase emulsion with the oil phase volume fraction of 74%-88% is obtained.
