Zusammenfassung:	The invention relates to the technical field of processing of dehydrated dried bitter gourd slices, in particular to a processing method of dehydrated dried bitter gourd slices. The method comprises the following steps: selecting raw materials: selecting fresh bitter gourd raw materials which are moderate in maturity, uniform in size, thick in meat quality, turquoise in skin and free of disease spots, plant diseases and insect pests and mechanical damage; cleaning the raw materials: washing the selected fresh bitter gourds; slicing: the cleaned bitter gourds are cut into slices of 0.4-0.6 cm; drying: uniformly placing the sliced bitter gourds on a drying tray in a drying machine, and drying at 50-60 DEG C for 6-7 hours to obtain dried bitter gourd slices which are completely dried; according to the processing method of the dehydrated dried bitter gourd slices, the manufacturing method is simple and easy to operate, and tedious soaking, blanching, vacuum treatment and the like are not needed; the dried bitter
