Zusammenfassung: | The invention discloses a preparation method of coarse cereal composite yoghourt, which comprises the following steps: step 1, blending soybean milk, coarse cereal pulp, nutrient pulp, skimmed milk powder and maltose according to a mass ratio of (30-50): (10-30): (15-25): (5-7): (1-3), and uniformly mixing to obtain a fermentation stock solution; 2, precisely filtering the fermentation stock solution, heating to 85-95 DEG C, keeping for 10 minutes, sterilizing, and cooling to 34-38 DEG C; and step 3, adding a leavening agent into the fermentation stock solution obtained in the step 2, uniformly mixing, fermenting for 6-12 hours in a closed environment at 40-45 DEG C, cooling to room temperature after fermentation, and refrigerating for 8 hours in an environment at 4 DEG C to obtain the coarse cereal composite yoghourt.
