High protein and high nutrition products comprising a mix of specific bacterial species and methods of producing the same are provided. Products can be produced by co-culture of starting strains that are free of foreign contamination that grow on simple gas feeds, such as industrial off-gases, which can be provided, such as carbon dioxide, hydrogen and oxygen.
