The preparation method comprises the following steps: crushing onions to prepare onion slurry; mixing the onion pulp with a compound enzyme, and carrying out enzymolysis treatment; the compound enzyme comprises pectinase and cellulase; inoculating saccharomyces cerevisiae to a product subjected to enzymolysis treatment, and performing fermentation treatment to prepare a fermentation blank; mixing the fermented blank with reducing sugar, and carrying out a Maillard reaction to prepare an onion seasoning; and mixing the onion seasoning with a basic sauce material to prepare the table sauce. The table sauce prepared by the preparation method is rich in fermentation base taste and sauce flavor, and the shelf life of the product is long.
