The method provided by the invention comprises the following steps: (1) mixing chitosan and an acetic acid solution, stirring for 35-45 minutes, then adding rosmarinic acid, continuously stirring for 5-15 minutes, then adding glycerol, and continuously stirring for 25-35 minutes to obtain a rosmarinic acid composite solution; (2) mixing pseudosciaena crocea fillets with the rosmarinic acid composite solution, and carrying out ultrasonic treatment; and (3) draining the pseudosciaena crocea fillets subjected to the ultrasonic treatment, and storing the pseudosciaena crocea fillets at 3-5 DEG C.
