The method comprises the following steps: acquiring a plurality of images of different phase shifts generated by a target high-reflection moving object under the irradiation of a sinusoidal grating; screening a target image without a light reflection condition from the plurality of images with different phase shifts; constructing a target coefficient matrix and a target light intensity matrix corresponding to the target high-reflection moving object based on the phase step number and the image light intensity of the plurality of target images; and performing three-dimensional reconstruction on the target high-reflection moving object according to the target coefficient matrix and the target light intensity matrix.
