The device comprises a bottom high-temperature infrared thermometer, a deformation measuring mechanism, a coating thickness measuring mechanism and a top high-temperature infrared thermometer, the method comprises the following steps: 1, collecting initial measurement data of a matrix test piece; 2, collecting real-time measurement data in the spraying process of the matrix test piece; 3, acquiring the real-time stress of the coating on the matrix test piece; 4, acquiring the real-time elastic modulus of the coating on the matrix test piece; 5, drawing a temperature change curve of the matrix test piece; and 6, drawing a change curve of the coating stress on the matrix test piece along with the coating thickness.
