According to the method, the leaf alcohol content in the tea leaves can be obviously increased by treating the tea leaves in a variable-temperature fermentation mode, and the leaf alcohol content can be increased from 2% to 28% or above; compared with constant-temperature fermentation, the fermentation is obviously improved; the total yield of post-treated leaf alcohol is greater than 85%; the method is suitable for industrial production.
