According to the method, high-energy electron beam irradiation is adopted to treat pecans, the increase speed of the acid value and the peroxide value of pecans is delayed, and it is guaranteed that the color of pecans is not affected by electron beam irradiation. The method comprises the following specific steps: (1) packaging; (2) irradiation; (3) storing; (4) determination; and (5) analyzing a result. According to the method, the rising of the acid value and the peroxide value of pecan acid is delayed, the technological process is simple and environmentally friendly, the method is suitable for large-scale application, and a premise is provided for electron beam irradiation processing of other oily nuts.
