The invention further relates to a freeze-dried bacterial powder direct vat set starter of the lactobacillus plantarum Z43 and a preparation method of the freeze-dried bacterial powder direct vat set starter. The freeze-dried bacterial powder direct vat set starter comprises the lactobacillus plantarum Z43, skimmed milk powder, trehalose and glycerol. When the direct vat set starter is used for fermenting sausages, the growth of spoilage microorganisms and pathogenic bacteria can be effectively inhibited, the safety of products is improved, the products have better flavor and appearance, and the direct vat set starter can be used for producing fermented sausage products with lower salt content.
